Using a dough hook start mixing the dry ingredients to combine.
While the mixer is running add the honey, olive oil and ten the water in a slow stream.
It should combine to form a ball the rolls into itself in the mixer bowl, If it is climbing the dough hook and sticky add flour a tablespoon at a time. If it is too dry and cracking add water a tablespoon at a time.
roll onto floured surface. Using your hands in a horizontal Karate chop motion with both hands pulling the side of the dough to the center of the bottom. Rotate the dough and repeat. Repeat the process until you have a smooth top and the dough is smooth at the bottom.
Grease a medium bowl with olive oil and place the dough in it. Cover with plastic wrap and proof in a warm part of your house for about an hour or until dough a doubled in size.
Remove the dough from the bowl and cut in half for 2 large pizzas or into 4ths for more of a personal size. Roll or toss out until the dough is about 1/2 inch thick.
Cover with a towel and let rest for 10 minutes.
For pizza add your favorite toppings and bake in a 400 degree oven for 15-20 minutes. If you want grilled pizza spray your grates generously with pan spray. Brush both sides of the dough with olive oil. Under medium flames cook the 1st side for about 5 minutes or the bottom is golden brown. Flip the dough and add toppings add topping, but sparingly. Cook until the bottom is golden brown and your toppings are heated. If the bottom is cooking faster than the toppings, move to a cooler part of the grill.
You can also grill the bread alone and brush with herb infused olive oil. This creates a wonderful bread alternative.
