This is a recipe I used at my small town reunion. I love cooking for get togethers such as this. It is the reason i love food it the first place. Food brings people together. These collard greens are part of that heritage. Try this recipe for collard greens everywhere people gather.

Ingredients
6lbscollards with all large stems removedabout 4 bunches
4lbssmoked ham hocks
8 cupschicken stockunsalted
2tbspsalt
1tbsppepper
1/4tspred pepper flakes
1/4cupapple cider vinegar
2tbsphoney
2onionschopped
5clovesgarlicchopped
2tbspbacon grease
Instructions
Remove all large stems and cut collards into 1"x 2" striips.
Rinse the sand from collards.
In a large stock pot, under medium heat, add the bacon grease, onions and garlic.
Cooke until onions start to caramelize and garlic is fragrant.
Add all remaining ingredients to the stock pot.
Reduce to a simmer, cover and cook for about 2 hours until the greens are tender.
Notes
For more heat add more pepper flakes or pepper sauce.
