Never would I pair a sweet BBQ like sauce with steak. That was then, but my mind completely changed when I crusted a steak with tons of ground pepper. I know by now you are thinking people like me should leave steak alone, but I am here to tell you these flavors celebrate steak in a big way. These pepper crusted strip steaks served with a bourbon molasses sauce bring huge flavor while keeping that big beef flavor we all love.
We created this recipe for pop artist and Kentucky native Will Muse. He is a big steak guy and being from Kentucky bourbon had to be part of the deal. Pepper Crusted Strip Steak with Bourbon Molasses Sauce

Ingredients
Bourbon Molasses Steak Sauce
- 2 tbsp butter
- ½ cup onion finely diced
- 2 cloves garlic finely diced
- 2 tbsp worcestershire sauce
- ½ cup ketchup
- ¼ cup bourbon
- 2 tbps dijon mustard
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 2 tbsp molasses
- 1 tsp salt
- 1 tsp pepper
Strip Steak
- 4 1 ½" thick New York Strip Steaks well marbled
- salt
- pepper very coarse ground
Instructions
- Preheat your grill to a temperature around 450°.
Bourbon Molasses Steak Sauce
- Using a saucepot placed over medium heat add the butter and onions. Once the onions start to caramelize add the garlic. When the garlic becomes fragrant deglaze the pot with the bourbon.
- When the bourbon is reduced by half add the remainder of the ingredients. Reduce the heat to low and let simmer for 15 minutes. Once the sauce is thick remove from heat.
Pepper Crusted Strip Steak
- Generously season each steak with salt on all sides. Next coat both sides of each steak with the crushed pepper being sure that they are fully coated.
- Place the steaks on the hot grill and cook 3-5 minutes on each side with an internal temperature of 135° for medium rare.
- Remove the steaks from the grill and let rest for 5 minutes. Serve with the delicious Bourbon Molasses Steak Sauce.
