  • 1 lb lean hamburger meat
  • 4 oz pepperoni
  • 4 oz pancetta
  • 1 lb spiral pasta
  • 3-4 cups pasta sauce
  • 1 8 oz mozzarella cheese shredded
  • 2- garlic cloves minced
  • 1- medium onion diced
  • 8 - sliced white mushrooms
  • 5- diced Roma tomatoes
  • 1 tsp Italian seasoning divided
  • 1/2 cup pepperoncini rings set aside a few for garnish
  • 2 tsp parsley as a garnish


  • Preheat oven to 350°
  • Cook pasta according to the directions on the box.
  • Heat a large skillet to a medium-high heat.
  • Lightly fry the pancetta.
  • Remove pancetta to a paper towel-lined plate, leaving as much grease in the pan as possible.
  • Add onion and garlic to pancetta grease, sauté for about a minute.
  • Add hamburger meat to onion and garlic, cook until meat is done.
  • Strain hamburger and onion mixture.
  • Toss diced Roma tomatoes in 1/2 tsp of Italian seasoning.
  • Combine pasta, hamburger and onion mixture, pancetta, pepperoni, tomatoes, mushrooms, banana peppers, half of the mozzarella cheese, banana peppers, half of the mozzarella cheese, and the pasta sauce in a large bowl stirring until well combined.
  • Move the mixture into a buttered casserole dish.
  • bake at 350° for 20 minutes
  • .add remaining cheese and bake for 8 more minutes.
  • Serve!

Bacon Caprese Protein Pasta

  • 8 oz Red Lentil Pasta
  • 8 oz Chickpea Pasta
  • 1 lb bacon chopped
  • 2 cups mixed color cherry tomatoes
  • 1/2 red onion diced
  • 1 - 2 1bsp minced garlic
  • 8 oz mozzarella balls halved
  • Olive oil
  • 1/4 cup saved pasta water
  • Fresh basil


  • Cook the pasta until al dense.
  • In the meantime, toss the tomatoes, onions & garlic in olive oil, and roast them at 425.
  • Cook the bacon to your liking.
  • Reserve 1/4 cup pasta water when you drain the pasta, and a teaspoon of bacon grease when you drain the bacon.
  • Add the veggies, with all the juice and oil left of the pan, with the bacon and pasta.
  • Add in reserved water & bacon grease. Top with mozzarella & fresh basil.
  • Let mozzarella melt halfway (you can put a lid on it to speed it up or put in the cooling oven) and it’s done!

The Noodles

  • Cooking spray
  • 1 8-oz. block cream cheese
  • 3 large eggs
  • 2 c. shredded mozzarella
  • 1/2 c. freshly grated Parmesan
  • Kosher salt
  • Freshly ground black pepper

The Filling

  • 1 tbsp. extra-virgin olive oil
  • 1/2 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 tbsp. tomato paste
  • 1 lb. ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 3/4 c. marinara
  • 1 tsp. dried oregano
  • Pinch crushed red pepper flakes
  • 1 16-oz. container ricotta
  • 1 1/2 c. shredded mozzarella
  • 1/2 c. freshly grated Parmesan
  • Freshly chopped parsley for garnish.


  • Preheat oven to 350°. Line a large baking sheet with parchment and grease with cooking spray. In a microwave-safe bowl, melt cream cheese, mozzarella, and Parmesan together. Add eggs and mix until incorporated. Season with salt and pepper.
  • Spread onto a prepared baking sheet and bake until golden and set, 15 to 20 minutes. Let cool.
  • In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add tomato paste and mix until onion is well coated.

Southern Triple Threat Pasta

  • 12 ounces uncooked pasta
  • 2 tablespoons butter
  • 1 pound sweet potatoes peeled and cut into 1/2-inch cubes
  • Kosher salt and freshly-cracked black pepper
  • half a medium red onion sliced
  • 4 garlic cloves peeled and thinly sliced
  • 2 cups roughly chopped kale leaves tough stems removed
  • 1/4 cup dry white wine
  • 2 tablespoons white balsamic vinegar or traditional balsamic vinegar*
  • 6 thick slices of bacon diced
  • lots and lots of freshly-grated parmesan


  • Cook pasta al dente according to package directions, in a large stockpot of salted water. Drain, and set aside.
  • Meanwhile, brown the bacon in a large sauté pan over medium-high heat. Once brown remove and transfer to a plate. Add sweet potatoes to the bacon grease season with a generous pinch of salt and pepper. Sauté for 7-9 minutes, stirring and flipping occasionally, until they are tender on the inside and nice and caramelized on the outside. Transfer to a plate, and set aside.
  • Add the 2 tablespoons butter to the sauté pan. Add the onion and garlic, and sauté for 2 minutes, stirring occasionally. Stir in the kale, white wine, and balsamic vinegar. Sauté for an additional 3 minutes, stirring occasionally. Remove from heat, and set aside.
  • Once the pasta is ready to go, combine the pasta, sweet potatoes, and kale mixture in the large stockpot, and toss to combine. Serve warm, garnished with lots of Parmesan cheese!
